The most widespread explanation is that "sangochao" comes from the Latin American "sancocho" — a cultural link running from America to Spain. The word is also documented independently in the Dictionary of Vega Baja Speech, published by Torrevieja's own Town Hall, though that doesn't confirm a reverse direction of borrowing.
The America connection fits the city's own history: for generations, Torrevieja sailors made months-long voyages to Cuba, Venezuela, Puerto Rico or Colombia, trading mainly in salt. Those same voyages brought back the habaneras that are now the city's signature. The Vega Baja del Segura has its own vocabulary, distinctive enough to have earned a municipal dictionary: "mañaco" means child, artichoke is called "alcausil", its leaves "pellorfa". "Sangochao" is one more piece of that vocabulary, and perhaps the one that has travelled furthest.

Ingredientes para 3-4 personas: 1 kg de sepia, 500 ml de vino blanco, 3 cebollas, 1 clavo, sal, pimienta en grano, 1-2 hojas de laurel, aceite de oliva virgen extra, y opcionalmente unos 30 g de piñones. Se estofa la cebolla, se añade la sepia a fuego fuerte hasta rehogar, se incorpora el vino, y se deja cocer a fuego lento alrededor de una hora — o 20 minutos en olla a presión.
