The bread is everything

La marinera is a typical tapa of Murcia and the whole coast, very common in the Vega Baja and southern Costa Blanca. Simple Russian salad —no peas or pepper, compact but moist— served on a special bread roll, colín-style, topped with a salt-cured anchovy. The bread roll is sold at any local supermarket — it's not exclusive to La Mata. Where to try it: Las Flores Playa, Avenida de los Suecos 2, overlooking La Mata beach.

  • Marinero — the same base, but with pickled boquerón instead of anchovy

The bread is everything

The ingredient that makes or breaks a marinera is the roll: without the right bread, colín-style, hollow inside and crisp outside, there's no real marinera. In La Mata you find this specific type of bread — some people are known to travel here just to buy it to make it at home elsewhere.
